Pancakes, anyone?

According to IHop, yesterday was National Pancake Day and I decided to make a pancake dinner.

Blueberry syrup is my favorite, so I pulled out my hand-picked blueberries from last summer…

…and made the most delicious homemade blueberry syrup!  I believe this recipe came from a blueberry farm in Missouri, and it’s what my mom used to make me when I was little.  Enjoy!

 

BLUEBERRY SYRUP

1 c. water

2 cups blueberries

3/4 c. sugar

1 Tbsp. cornstarch

dash salt

1 tsp. lemon juice

1/2 c. whole blueberries

Heat water to boiling.  Add blueberries and return to boil.  Combine dry ingredients.  (Note: I always add water to corn starch and slowly stir in separately to avoid clumping).  Stir into blueberries and cook, stirring constantly, until thick.  Remove from heat, add lemon juice. Toss in whole blueberries.  Store covered in refrigerator and warm in saucepan before using.
